- 8 cups of shredded red and/or green cabbage (you can also find pre-shredded slaw mixes in the produce section at your local Whole Foods, Central Market or health food store)
- 10 ounce bag of shredded carrots
- 1 red bell pepper cut into thin strips
- spicy peanut dressing
- cilantro and a wedge of lime as garnish (optional)
In a large mixing bowl, simply combine your veggies with the spicy peanut dressing. Garnish with torn cilantro and a wedge of lime. Serve as a yummy side dish, mid-day snack, or as an entire meal!
