Coleslaw the Fresh WAY By Linda Wagner


  • 8 cups of shredded red and/or green cabbage (you can also find pre-shredded slaw mixes in the produce section at your local Whole Foods, Central Market or health food store)
  • 10 ounce bag of shredded carrots
  • 1 red bell pepper cut into thin strips
  • spicy peanut dressing
  • cilantro and a wedge of lime as garnish (optional)

In a large mixing bowl, simply combine your veggies with the spicy peanut dressing. Garnish with torn cilantro and a wedge of lime. Serve as a yummy side dish, mid-day snack, or as an entire meal!
