Cilantro Garlic Shrimp

Total making time: 15 minutes

Serves: 2-4


1 pound of peeled jumbo shrimp (500g prawns)
1 tablespoon of extra virgin coconut oil
1 tablespoon of garlic paste (or 3 finely diced garlic cloves)
1/2 cup fresh cilantro/coriander
1 hot chilli (optional)
2 tablespoons of lemon juice (1/2 – 1 lemon)
1/4 cup extra virgin coconut oil for cooking


1. In a bowl make the marinade. Mix the oil, garlic paste, cilantro, chilli, and lemon juice in a bowl. Add the shrimp and coat well.
2. Heat the rest of the oil in a fry pan on medium to high heat. When hot add the shrimp. Make sure to get all the marinade in the fry pan as well.
3. Cook for 5-10 minutes until the shrimp is cooked and tender. Serve with rice or quinoa!
